Summer Sausage

This recipe will take 20 minutes of prep time and yields 5 lbs.

Ingredients:

  • 5 pounds ground beef
  • 4 tablespoons meat tenderizer
  • 2 teaspoons cayenne pepper
  • 2 teaspoons ground black pepper
  • 3 teaspoons garlic powder
  • 3 teaspoons brown sugar
  • 2 1/2 teaspoons mustard powder
  • 2 teaspoons whole black peppercorns
  • 4 teaspoons liquid smoke flavoring
  • Pre-soaked sausage casings

Preparation:

Use a large bowl to combine the ground beef, meat tenderizer, cayenne pepper, ground black pepper, garlic powder, brown sugar, mustard powder and the whole peppercorns. Mix all of these ingredients well. Now finish by pouring the liquid smoke over the mixture but do not mix.

Cover the mixture up and refrigerate for 24 hours. Put mixture into casings. Preheat oven to 150 degrees. Place sausages onto a 9×13 inch baking dish. Prick sausages and bake for 4 hours. Remove them from the oven and allow to cool before serving.
